“We will keep the white tablecloth appearance but we’ll make it more casual,” Tammy said. “In the French terms, we’re making the transition from a restaurant to a bistro. What we’ve seen in the U.S. is a larger movement toward more casual dining. The fine dining of old has passed in terms of the formal attire and formal service… Our society as a whole is more casual and we want to meet that… The quality and selection of the food will not go away. We will do smaller portions and more casual fare and there will be a moderately priced menu that runs from lunch through dinner. Consistency is the key. You have to be good every time.”
